My family isn’t really into nutrition, and my mom’s grocery shopping is, to say the least, pitiful. She buys what she intends to cook, and she only cooks two or three times a week, with little concern for what makes a complete meal. I eat mostly frozen dinners, and I want to start cooking myself some dinners that are a little more nutritious.

We don’t keep very many cooking ingredients in the house, mostly just the basics, but I may be able to afford one or two special things per grocery visit. I need simple recipes because I haven’t cooked much.

I have never eaten vegetables before, so right now I am having a hard time tolerating them. I am to a point where I can eat small sliced carrots, peppers, and snow peas if they are cooked in a soup or something and taste like the broth. I like potatoes and absolutely loathe tomatoes (tomato flavor is okay, just actual sliced tomato is gross to me), celery is kind of icky but tolerable, and I cant eat broccoli. I haven’t tried green beans or anything like that yet. Anything else, you can assume I haven’t tried.

As far as fruit is concerned, I like apples and bananas, but have never had anything cooked with them in it. I am allergic to artificial fruit flavoring and dried fruit. I don’t like oranges but am willing to experiment with them. I have never tried anything else.

In general, I don’t eat pork. I love beef and chicken, turkey is edible, not a huge fan of gravy but will eat it, love pasta and breads. LOVE, LOVE, LOVE milk and cheese. I have never tried fish or tuna but am willing to try, but should start with some that are a little less “fishy” if you know what I mean. I was raised with the idea that seafood is disgusting, so it’s a mental hurdle for me to start trying to eat it, I have to ease my way in the best I can. :P

Do you know of any simple meals I can make for myself for nutritional value?
Would it still be nutritious if I scraped the mushy inside part out of the tomatoes and just ate the outside part? It’s more the texture that gets me than the taste, maybe I could work my way up.

I’m more interested in commonly available non-fish seafood, but 1 or 2 varieties of fish is ok. Thanks!
