but my step daugter is coming over this weekend and she is off “meat” for Lent. She’s not too fond of seafood so I’m making her crab/salmon cakes and I’m out of tartar sauce. She’s already severely allergic to dairy, but can eat mayo, pickles and the other stuff for tartar sauce. My recipes either come out too pickle’y or too mayo’y. What’s the best homemade that you have?
And for all you that say that seafood is meat, I KNOW! It’s a Catholic thing that I will never understand. I quit asking years ago. It’s a good thing that I love seafood/fish or I could never get the family to eat it with me.
Hey, Mr, “I wonder”…do you actually read the whole question before posting recipes that make no sense from the questions asked?
Thank y’all in advance for the ideas. I have plenty of time to let the tartar sauce “meld” before she comes over.

What is “New Zealand Style” fish and chips batter recipe?
Filed Under Best Seafood Recipes | 4 Comments
I just spent the morning looking for recipes for New Zealand style fish and chips….no luck. Yesterday, my wife and I ate at a small seafood shack in Gulf Sores Alabama called “The Wheelhouse” where I had the second best fried fish of my life; the first being the Walleye at “The Hot Fish Shop” in Winona,Minnesota!
The shop is owned by a man from New Zealand and his american wife. I tried to get the basics to his batter recipe, but he said it was a very guarded secret, known by four people…two of whom are in New Zealand.
A beer batter type, crusty and crunch textured coating was quite yellowish in color under the golden brown surface. I suspect mustard as the color source, but I wouldn’t say I could tase mustard. Any suggestions that may lead to breaking the recipe code would be appreciated. The roof of my mouth is still a bit burn’t from eating the very hot fish too fast. I am going back again as soon as the mouth heals.

Does anyone have a recipe for milk based seafood gumbo?
Filed Under Best Seafood Recipes | 2 Comments
30 years ago I lived in Houston and there was club there called the Men’s Club. I ate there at lunch every Friday because they served a gumbo made with white sauce instead of the Cajun roux base. I loved it. Does anyone have a clue as to how I can get that or another white sauce based seafood gumbo? I think today the place in Houston called the Men’s Club is a strip joint. It wasn’t when I was there.

Gumbo recipe w/o tomatoes?
Filed Under Best Seafood Recipes | 4 Comments
Hey, my friend made the best gumbo I ever had! But he swears he’ll never tell me the secret recipe!! I’ve seen some of the gumbo recipes on here and they have tomatoes! Yuck!! I know for sure he did not use any tomatoes… I did sneak a peek at some of the ingredients he did use: shrimp oil, cilantro, chicken gizzerts, celery, all sorts of seafood….and some sort of seasoning bag!! Can someone please, please, please help me find out what was in that delicious gumbo?!!!
Thanks Ya’ll
